In GTS there are 2 fields under transportation tab:
1. Means of transport at border
2. domestic means of transport.
how the values in this field get determined in standard SAP GTS?
Request clarification before answering.
If your feeder system is S/4 then below is place from where it gets determined:
For Export:
1. Mode of transport at Border: Delivery document -> Header -> International trade -> Mode of Transport Border (Field: LIKP-ITM_EXPVZ)
Type of Means of Transport crossing Border: You can determine using defaulting rules in GTS using Mode of transport at Border
2. Domestic mode of transport: Delivery document -> Header -> International trade -> Mode of Transport Inland (Field: LIKP-ITM_IEVER)
Type of Means of Transport Domestic: You can determine using defaulting rules in GTS using Domestic mode of Transport.
For Import::
This data is not transferred in standard SAP from Inbound Delivery. You need to default it in GTS.

It is a mapped from corresponding fields from ERP. Check the Customs Code Lists section in the GTS IMG Customs Management.

Just to comment - in case of doubt - that Dean's answer here is correct for Export, but not for Import. There is no standard population from a SAP ERP system of the Transport fields for an Import declaration.
In the Export case, the fields are transferred from the Foreign Trade header data of the ERP Billing Document.
