undefined material in engineering replace with specific material in production

We are on ECC6.0 EHP7. We order sheet metal to cut parts to be welded. In engineering specification technologist request metal plate with 2mm x 1500mm x 6000mm, and metal grade EN 1.4541. Procurement finds plate wich is double sertified for metal grade 1.4541 / 1.4878.

How can i replace material in engineering EN 1.4541 with purchase requisitions plate EN1.4541 / EN 1.4878

I understand in Engineering BOM I will use one material master, but in production BOM I use another material master as it has different characteristics?

I need map process when for product design you have generic components description, while for production it is finalized with specific components adjusted based what is available to purchase. I know that S4 Hana uses preliminary material category in BOM, I read about component substitution for automotive - basically I need some understanding on how to manage material master, where technologies work together with procurement and adjust product component list based on what is available on the market.

Typical in SAP community - none of questions get answered. 20 year ago that was not the case - you ask question you get some answer of find somebody else question, which leads to solution. Now, SAP somehow made, that there is no answers
