When I navigate to Scheduling Agreement for Document Type – LZM, and click on Forecast Delivery Schedule – I don’t see Open Quantity appearing there it shows blank and doesn't even show tab name next to cml released qty as shown below in the screenshot
Whereas when I create Scheduling Agreement with LZ (Doc type) system behaves fine and I can see open quantity tab (why is system behaving like this)
Request clarification before answering.
The reason is that the processes for scheduling agreement with forecast and JIT delivery schedule and for the scheduling agreement with delivery orders are different 🙂
In LZM scheduling agreement you do not see the tab for JIT schedule (I hope that this is what you mean by tab), because for the document type it is set not to use JIT schedules. You can see this if you navigate to Header->Sales tab.
As to the differences between these fields:
LZ
LZM
Open delivery quantity is updated when you create a TAM order with reference to the scheduling agreement. From the orders you create deliveries, process them in the warehouse, etc.
For LZ agreements you do not create release orders, you create outbound deliveries, which you process in the warehouse.

I am aware of those settings which you mentioned but what I meant was something different

Please have a look at the screen of both LZ and LZM where you maintained schedule lines

Please note we don't have any userexits or enhancments built around this , i am only discussion standard SAP here
