While creating the sales orders for a particular customer the route no. in the shipping tab is assigning automatically and the user wants this field to remain empty as it is causing them planning issues. Can someone tell how to do this, so that every time user creates sales order for this customer the route field remains empty?

In SD Route customizing, you can define rules for route determination separately for sales orders and deliveries:
If you maintain entries only in the second table (delivery), route will not be determined in sales orders. However, I would strongly advice to rediscuss this requirement with business - if routes in SO are causing planning issues, probably they are incorrectly maintained in terms of data like transit time, transportation lead time etc. Without a route in SO, the backward / forward scheduling will be inaccurate.

Routes are set based on a customer's transportation zone. To stop a route from being set for a customer, use a different transportation zone that isn't used for route determination.
