According to the documentation, in SAP S/4HANA Asset Management Public Cloud, the standard process requires entering a start and end date (in Perform Maintenance Jobs App) when technicians recording time, so starting and pausing the work does not affect time recording. My question is whether, from SAP Maintenance Assistant (or any other option), technicians can press play and pause, and the system automatically records the time elapsed between pressing play and pause.

The SAP Maintenance Assistant app does not support play/pause or automatic time tracking in SAP S/4HANA Cloud Public Edition.
Technicians must manually enter the start/end time or duration.
No standard Public Cloud app currently offers real-time stopwatch functionality.
For that, a custom BTP extension or third-party tool is needed.
