My doubt arises because theoretically, managing two systems could simplify operations. In the clients I have worked with, there has always been a 3-system landscape, and I wonder why it remains the default configuration currently.

thats right 3 is standard.
But for smaller companies or for start of project 2 system might be also sufficent.
Later you could always add a system for 3 system landscape, or 4 (Sandbox),.....
