After entering the sold to party, ship to party and purchase order no. system should automatically populates below two dates
a. PO date – Current date
b. Requested delivery date – Third business day from current date(Excluding Saturday, Sunday and public holidays)

On a general note - When you require some settings for the sales order (in other words settings applicable for the entire sales order) then go to VOV8, in to the Sales document type and there search for the relevant settings.

Hi,
Goto the T.Code VOV8.
Select your Document type.Details.
Maintain the value as "3" for the field "Lead time in days".
Also check the tick boxes for "Propose deliv.date" and "Propose PO Date".
This will derive the required dates automatically in the Sales Order when creating the order.

In the T.code-VOV8 you can check the Following Boxes and Lead time in days as Zero for Current Date
Propose Delivery date
Propose PO Date

As Shiva told the Propose Delivery date & Propose PO Date will automatically come in the sales document.Second thing put 3 in Lead time in days as per your requirement.
Finally the exclusion of Saturday,Sunday & Holiday will be maintained in the Factory calendar.
So as per your calendar settings it will work.Don't worry.
