I am trying to read the metadata of attachments to GTS custom documents which are stored in Alfresco content repository. I would like to know how KPRO works in general, so that I can get more insight about what tables to look for. Thanks in advance.

The "Knowledge Provider" (KPRO) is described quite well in the documentation for BC-SRV-KPR at help.sap.com.
You might also take a look at tables KPROPHF and KPROPHIO.
