One of the Fine tunning activities in the Implementation Project is to define a Time zone for the system, which is supposed not to be changed (Help Center indicates that a change can be made via an incident which needs to be created 2 weeks ahead in time).
However there are some countries where the UTC time zone changes during the year, at least twice, i.e. México summer time zone is UTC-5 and winter time zone is UTC -6.
There are several "flavours" for UTC-6, one of these is somehow specific for México: "(UTC-06:00) Hora Central Norteamérica (Ciudad de México, excepto EE.UU/Canadá)", if I use this one does it "self-adjust" during summer?

The thing is that for example, lets say that "flavor" of UTC -6, It will always be UTC-6. You'll have to check out if that timezone updates automatically based on a server.. and if it considers that change that you said.
Otherwise, you can try creating a business configuration, and try to set that variant.
