Can we update activity from Service request?

We have created an OVS field as Email assigned to and we want to update this field when there is an email going from Ticket and create an Activity. We want to update this field with the same employee who is assigned to the ticket.. Long story short we want to copy the ticket assigned to the email assigned to field on every inbound and outbound email interaction happens in the ticket.

 

I am using internal communication in the ticket but it seems it is not updating the acivity.
