The reason is to help the user see in one glance the status of an entity for example : Green - approve , Red deny

For Resource Scheduler , you have an option for color base on status code

1.Go to Business Configuration ->Implementation Project ->Open the Fine-Tine Activity 'Demand Processing'.
Select MAINTAIN COLORS FOR DISPLAY OF ASSIGNMENTS
