it's not clear what you mean with "The status procedure couldn't be set from item category ZS07..". Usually the user set the user status of the assigned status profile (consider the assigned Status profile for item category ZS07 in the Customizing transaction CRMC_ITEM_MA).
Alternative your status profile ZISAORDI are not provided for your "follow up document object", you can check these in Tx. BS03, choose status profile ZISAORDI --> "Go to" --> "Object types". Here the relevant object type should marked with relevant object type of the follow-up Object Type. For service order and Service order item usually the object type CRM Order Header & CRM Order item are relevant.
