While trying the "Test Email" functionality in content studio in SAP Hybris Marketing 1709 SP01, We are facing a random delay in receipt of test email.
Could you please help/provide pointers on how to track the mails (scheduled/sent) from the content studio?

Request clarification before answering.
Per my knowledge, "test" emails are sent directly and there aren't any delays in the Marketing side. I have an experience with Amazon, and I haven't noticed typical delays on their end with the "test" messages. SAP email service could have them, I don't know.
It could be that delay is happening relaying the message to your inbox. Inbound message server could relay the message to your inbox with a short delay or probably your email client is checking the server with time intervals rather that having them delivered to an inbox immediately.
There is any way how to track "test" emails sent in the system.
