Hi,
Due to our security updates on Redhat Linux boxes, MySQL got upgraded from version 5.7 to version 8.0 in our production system. But our Hybris production is running with 1808 version. It was set up to use MySQL DB 5.7 version by using appropriate DB driver (mysql-connector-java-5.1.23-bin.jar).
But due to this DB version upgrade, We are not sure whether we could use the site normally by using newever verion of mysql DB driver (mysql-connector-java-8.0.19.jar). Does SAP Hybris1808 commerce platform supports MySQL 8.0 version? We do not see any documentation to support this.

Would you recommend us to downgrade the MySQL version to 5.7? If yes, what is the best procedure to do this without affecting Hybris Data structure or actual data.

Request clarification before answering.
Only SAP Commerce 1905 has been verified with MySQL 8.0, so the recommendation here would be to perform an upgrade.
