We are planning to upgrade our existing SAP ecommerce from 6.5 to 2005. When I checked the wiki, I cannot see any guide to upgrade the version from 6.5 to 2005 directly. Is there any guide to upgrade 6.5 directly to 2005? What is the best practice when upgrading? Do I need to go through each version upgrade (Like 6.5 > 6.6 > 6.7 > 1808 > 1811 > 1905 > 2005) until I reach 2005?

The ideal approach is to upgrade one version at a time, since there may be changes in a specific version that is needed before you can proceed to the next version.
We had a case when we tried to skip many versions, and it failed somewhere. To visualize an example, assume there are versions A, B, C, and D, and our goal is to upgrade from A to D. When we did a direct upgrade from A to D, we encountered issues. So, what we did was upgrade from A to C, and then from C to D. However, the ideal situation is to always upgrade one version at a time, especially if the project uses many different Hybris modules. In our case, it was mostly Product Content Management. So, we didn't need to think about many things.

I'd suggest to upgrade from major version to major version like you already mentioned. This will lead to smaller and clearer gaps. It still a tough and long way...
