Hello,
can someone help me with the best practices, key considerations, lessons learned to Migrate Data from ECC to V2.
Following objects are in scope for data migration,
Accounts, Relationships, Contacts, Material groups, materials, Employees, Sales orders

The best practice is to use the replication mechanism: Integration with SAP ERP | SAP Help Portal
I don't think replication of Sales Orders is supported in V2. You should be able to have a view on those from V2.
