It was proposed in the 1611 release that ticket interactions could be embedded within the Summary PDFs, is this now the case? If so how can this be enabled?

Yes, now you can add email interactions to the summary PDF. To do this, you need to edit the PDF Form Template using Adobe Lifecycle Designer (from Administrator -> Form Template Maintenance). Among all available fields and sections, you will now also find this new option.
