I am a new guy in Hybris(but not new in Java), I would like to "go inside" Hybris but there is limited materia, only having https://help.hybris.com/1808/, and this tutorial be honstly it is not good, a lot of things seems like chaoes, would I know how you do it?

Arvind's references for the Hybris 5.7 trails are very good. However, I'm not sure that you will be able to finish the Hybris 5.7 trails (in wiki.hybris.com) without any issues, since some of the source code that you will use will work only with Hybris 5.7, and Hybris 5.7 can't be downloaded from SAP SWDC anymore. Unfortunately, SAP didn't migrate the Hybris 5.7 trails for use with Hybris 6.x.
Arvind provided a link to Trails, but this doesn't teach you the basics of Hybris. Check out Hybris 123 first, especially the Explore Hybris Tour section.
If your company will pay for it, you can also take the official classroom trainings for Hybris, but they are VERY EXPENSIVE. They contain detailed discussions that you will not find in the trail. These trainings are also very helpful if you plan to take the Hybris certification exams (but the training is not mandatory for the exam):

About Spring, it's not going to be covered in detail by the Hybris wiki/help, since it's a separate technology, which Hybris is based on. The assumption / prerequisite of Hybris is that you already understand Spring. You can find official documentation here: https://spring.io/projects/spring-framework
About Hibernate, you don't need to learn it, because Hybris uses a different kind of persistence framework.

Yes, I already finish the "Explore Hyrbis Tour" section, however, obviously that is far not enough for common develop work in Hybris.
Like Spring, Hibernate... framework, I would like to detail go deep inside Hybris, but... may you know that many place in the help secion is not work, especially the datahub part, the demo itself doesn't work.
And Hybris is closing project, so I really don't know if there is more place to study
