Hi,
for our customer, we must create a hierarchy tree in a way that the director see all the information from all countries, sales manager sees all the information inside his own country, for example slovenian sees all from slovenia, croatia from croatia...) and below sales managers are employees, which see only their data.
How can we vreate such a tree in the easiest way?

I believe your requirement can be achieved by using a naming convention for either territories or org. structure units, where the code/name can indicate which country and level.

Hi,
i created a territory with two sub-territories for each country that i need. How can i tell which sub-territory is responsible for which country? In access restrictions i can set the sub-territory to read/write, but i didnt specify anywhere for what country.

There are two posibilities.
If you have defined sales data (and this is country relevant) for you account than you may use access restrictions based on sales organization level.
Second possibility is that you use territory management based on countries, and than you can also may use access restrictions, but based on territory assigment. Territories may be configured that system automatically assign territory dependant on country.
