Just wondering this as I know I have friends who that are considering pushing a new eCommerce environment based in Hybris.
Request clarification before answering.
As Leo has stated, it depends on what your question is leading to.
If you want to setup a local environment and evaluate the out-of-the-box accelerator, then a couple of hours at best.
If you want to create a production ready website for a customer, then as Leo said for an OOTB implementation, using the OOTB templates and custom integrations(payment, order, master data) 3-4 months
If you want a custom, all bells-and-whistle website, then 6-9 months even more depending on the number of custom requirements

That's a very broad question.
Probably a few weeks. If you heavily base your site on the out of the box accelerator templates to cut down on design time. You'll also need a payment gateway, a few couple of weeks signing contracts etc there. You could get some bare bones site up in a few weeks.
To properly do it, 2-3 months.
