How Do I Hide a Value in a Picklist

I have a number of unwanted picklist values that I would like to remove from the standard 'Visit Type' field. The issue is that some have already been used and I do not want to lose the data nor do I want to change all of the records to a new value. Therefor, I would like to hide the value so it cannot be used any longer.

I tried something in one of our internal test systems that can help, Code List Restrictions.

You can specify values based on a field or a business role or, as the help links says, a combination of both. Consider this to solve your scenario. A nice blog to read more about this feature, from one of its developers is here.
