Data migration in production environment for SAP commerce2205 Cloud

Hi Team,

We are doing hybris upgrade from 6.1 to SAP commerce 2205.As part of this we are migrating from Oracle DB to MSSQL server.

We have installed our application in Cloud QA and UAT environments and did the data migration from Oracle to MSSQL using AWS DMS tool.
Now we are in the process to install the application in Cloud Prod environment.
But the problem is here with data migration.
In lower environments it took 5 days to migrate the database(2 days for data migration and 3 days to fix the issues from application end).

Our business is not okay with 5 days downtime. So if we start the data migration today then it will take 5 days to complete. As there is no downtime we will lose these 5 days data but we need to import this data at any cost.
And the data migration is from 6.1 onprem Oracle DB to 2205 cloud MSSQL DB.

Could you please help us on below points:
1.How to find out the tables/types which are modified in this duration of 5 days ?
2.How to import 5 days data into hybris without any issues?
3.Can we do this from DB end /hybris end? which is easy?

What we did is we seeded the database and did a delta sync the night of the release. (Well SAP did that we moved into CCv2 Portal).
