Within Customer Checkout, is it possible to cancel the receipt and reopen the Table so that you do not loose the Table details and can add further items to the bill?
Request clarification before answering.

Once you select 'cancel receipt', the system closes off this table and all contents of the receipt. It then posts this cancelled receipt to the cco manager, showing that the items have been cancelled or 'returned'. Once the receipt of a table has been cancelled, you cannot re-open that same table with the same details again.

This is cancelling an order as opposed to a receipt.
This did point me to the section to cancelling a receipt whereby you select the table for which receipt you are to cancel. Once performed, does this still hold the table number and order details so that you can add further items?

In the customer checkout user guide, it explains the different scenarios of cancelling items.
As of Customer Checkout release 2.0 Feature Pack 09, you can use table management to do cancel receipt and manage items. For that you will need the appropriate authorizations.
Also, receipts and items are never physically deleted but marked as void for tracking and auditing purpose. See blog below for more detailed features
