Please use the "Maintain Document Type" activity under the Sales->Activities fine tuning in order to set custom (z) document types for Activities.

Hey Or Cohen,

I guess it is not added to your project.

Go to Business Configuration-->Implementation Project-->Select your Project-->Open Activity List--> All-->All Activities(search query)--> Activities-->Add to project
