Hi procurementeng,
You have a great opportunity ahead of you. Do not go crazy about learning everything at once. It is wayyyy too much and it is easy to get confused.
You need to find what is your sweet spot in the Supply Chain. Let me explain...
If you are connected to indirect sourcing for instance, that supports the overall operations of businesses, it requires a different approach then if you are in the direct sourcing business.
Understanding how Sourcing and procurement features of S/4, Central procurement, Simple Logistics and Ariba can leverage a discrete manufacturing or a digital services business model and then advancing on the understanding of demand and planning are key for you to be successful.
The best consultants I know have come from the business, not from IT. So I guess, you have an advantage. 🙂
The 2 primary topics you need to start digging is S/4 HANA Logistics and Ariba.
And Here is where I would suggest you to start with:
Great blog to start with:
https://blogs.sap.com/2019/08/27/introduction-to-sap-ariba/
SAP Procurement community pages:
https://community.sap.com/search/?ct=page&q=ariba
https://community.sap.com/topics/materials-management
Recommended training at open.sap.com:
and Hands on Experience:

If you have the budget for a Learning Hub license to take SAP career path certification training, you could have these trainings in your path:
Hope this head start can you.
There are tons of free training on the internet. YouTube has a plethora of that. And there are interesting sources like Udemy that are also worth it.
See you around in your future S/4 & Ariba projects!
Please select/vote on the answer if that helped to address your topic.
Cheers 🙂
