With respect to PP or MM, what does a super user or core user do? Do they create Master data, creating purchase orders, etc or they work in SPRO IMG settings as well?

Though it may vary from organization to organization but generally a Super User serves as a middle layer between system end-users and technical support staff i.e. s/he attends to resolve the issues reported by business, interpret the business requirements to IT and ensures that the solution designed and developed by technical team meets such needs. The role is more like a Business/System Analyst who understands and supports both sides; implementation as well as operations.

Hi

The role of Super User and Core User is same. These are just term given by the Organizations you are associated with. As rightly said by faisal.iqbal this may very from Company to Company.

Super/Core User usually has good business process knowledge of a company and SAP i.e Master Data and Transaction Data. They take care of 1st Level support raised by End Users in ongoing transactions and if they can't solve it then forward it to SAP Support team.

They gather the business requirements from the Business Users and explain the same to SAP Consultants for its mapping into SAP.Note: They do not do IMG related activities.

They do testing part for any newly implemented solution and give UAT Sign Off to Consultants.

They may have to give training to the End Users across the branches.

Initially this experience is good to have for the long term perspective.
