Normally, to become a functional consultant, it would be easy for those who worked in the respective domain for atleast couple of years so that they would have faced the process of how procurement is being followed. From your post, I presume, you don't have any such domain experience in procurement. Having said that, as an interviewer, if I interview a fresher candidate who undergone some course as you mentioned, I would expect the candidate to know the basic standard MM process from SAP point of view, if not the entire configuration, like

  1. what are the pre-requisites to create a Purchase Requisition ?
  2. what are the pre-requisites to create a Purchase Order ?
  3. Can the PO be created from a Sale Order automatically ? If so, in what Business process ?
  4. What is the movement type used while doing MIGO ?
  5. What is the other movement type used for sending materials to vendor ?
  6. How system is fetching tax in PO / MIRO etc.,

Know your stuff, nobody is able to predict what an interviewer is asking you. A recommendation might make you to focus on something what this particular interviewer is not asking.

Nobody is expected to know everything, but you should be prepared to have an answer for questions where you don't know the exact answer. You should be able to convince the interviewer that you know where to look to find a solution.
